I make a salad with orzo instead of rice. Mine has calamata olives, chopped sundried tomatoes, chopped artichoke hearts (not in marinade), diced cucumber, diced red onion, lemon zest, garlic, feta. Toss with an easy "vinaigrette" of lemon juice, olive oil, chopped dill. S & P to taste.
