My plan is to use up all of my tiny canvases. I'm expecting about 80 in total when I'm done.

I love the new King Arthur gluten-free bread flour but it makes an utterly unforgiving dough. It can't be kneaded, so you fold it instead. If you don't hit the exact correct consistency in the mixing phase, the dough can't be folded.
So we're making bread today from unfolded dough.
