I will admit my memory is not perfect. And if I am wrong I will make my apologies and good-byes, but Kace was my first block, and I am as sure as I can be after a year of what Kace said. At the very least Kace was an active partner in the 'joke'

How do you search back a year?

The baking soda will probably make it too salty, but that doesn't matter if you are distilling it

I've seen it done before. I don't think it tasted that great, but the brewers then distilled it to I think 90% Abv before diluting it to 40 and they said it was pretty good.

You are welcome.

I am still developing some recipes based on that, but so far so good.

You can add fruit for flavouring too, but you need a lot

Everything must be clean and sanitary, and once there is alcohol present avoid splashing in oxygen or you could be making vinegar, or a cardboard taste

I agree about the costs of special equipment so aside from glass fermenters, air locks, and siphon hoses, I am pretty old school.

I don't go for a lot of the newfangled stuff

Even beer I make using my largest stock pot not some purpose built kettle thing

I have open fermented, but I like finding a repeatable recipe that tastes much the same each and every time I make it.

In simplistic terms, (I think) I brew like its a science, and you do it like its an art.

Both work, but I don't think I am as flavour adventurous as you.

I wouldn't recommend wild fermentation for a beginner as the results are less repeatable.

However, to each their own, and wild fermentation can be fun and rewarding. I just hate seeing people quit the hobby after a failure, and imho wild yeasts aren't easy for beginners.

Carbonated, the wife compares it to one of those vodka seltzers they sell in cans. I bottle it dry, but if you like a sweeter drink then things get a little more complicated and take more explaining
It is a bit thin or watery but the carbonation helps that

Whatever you add, submerge the bag (fermentation weight could help) and leave in place for 1 to 2 weeks. No more than that or you could add a vegetal grassy flavour.

You can bottle like this, or you could bottle condition it to carbonate it like a beer.

Instead of hops and citrus peel
If you know enough about flowers to know which are edible you can add some flowers. Rose petals would probably work well. I have used flowers from culinary sage and it was so excellent, strawberry mint flowers are good too. Dandelions (no green stuff) may be good

Take a hop bag, muslin brewing bag, or a cheese cloth you can tie shut

Add 1/4oz or a bit more of your favourite citrusy hop to the bag and the zest of a lemon/lime/orange and then close the sack. Last time I added dried bitter orange peel with Idaho7 hops and it came out lemonade like

You can use most wine yeasts. EC-1118 would be fine but maybe not as flavourful. For this recipe even a bread yeast would work okay

Ferment to dry, (1.000 specific gravity) and then rack into a second container. Leave all the dead yeast and stuff at the bottom of old jar.

Here is a simple recipe, for a light brew ~5% abv
1 lb honey
Put honey in fermenter and add enough water so that there is 1 us gallon total must. Don't add a gallon... make the total volume of water and honey = 1 gallon

Another thing I just thought of, is that honey is expensive, if you have worries about being a beginner, running a few brews with table sugar instead of honey can be helpful

So many people recommend lalvin ec-1118 (champagne yeast) for novice brews. It forgives mistakes BUT is not known for flavour

Dont assume high alcohol is better. The high alcohol ones need to age forever before they taste decent. The best meads imho that taste good right away are ones I made at 5 or 6%, flavoured with hops and other flowers and then bottle carbonated. If I get time I will reply with a recipe later,
