People don't say "um" because they're nervous.

Instead, one reason to say "um" is to signal to listeners that you want to keep talking. The amazing thing is that we usually don't say "um" when we're talking to a computer, like Siri.

I'm reading a usage guide from 1884 (as one does) and some of the entries are making me laugh:

"Don’t say 'gents' for 'gentlemen,' nor 'pants' for 'pantaloons.' These are inexcusable vulgarisms. Don’t say 'vest' for 'waistcoat.'"
