I recently ran across a couple of riffs on walking a mile in someone's shoes. The first I saw on Twitter (I think -- I couldn't find the original). It was something like "You should walk a mile in my shoes, because then you'd be a mile away from me, and that would be fantastic. Keep the shoes."

Cooking tip of the day: if you cook red cabbage or red onions, the red pigment (caused by anthocyanins) will turn an unattractive shade of blueish-gray. But you can avoid this by adding a bit of acid (vinegar or citrus juice) before or during cooking.

Cooking tip of the day: For extra crisp fried foods, substitute rice flour for part of the wheat flour called for in batters and breading. With no gluten, rice flour keeps batters from becoming gummy. We use a 50/50 blend of rice to wheat flour in batters for deep or shallow frying.

Cooking tip of the day: Another thing that salt does in cooking is to draw moisture out of food. You can use this to your advantage when cooking vegetables with lots of water, like zucchini. For beautifully browned, flavorful zucchini, trim the ends, then cut them in half lengthwise.

Cooking tip of the day: Salt has numerous effects in cooking; one thing it does is to soften bitter flavors. An extra pinch of salt in a vinaigrette destined for bitter greens will help tame the bitterness, as will blanching the greens in salted water.

Cooking tip of the day: If you have an immersion blender (aka stick blender) and 5 ingredients, it's a breeze to make homemade mayonnaise. Start with a wide-mouth jar (or 2-cup liquid measuring cup) -- the blender should go all the way to the bottom but you don't want much space around it.

Cooking tip of the day: If you cook with chipotle chiles in adobo sauce, try this. Instead of chopping or mincing one or two at a time, puree the whole can, with sauce, then refrigerate in a sealable container (plastic will stain, so use glass if you have it).

Cooking tip of the day: To cut a sandwich more neatly, do it in two stages. First, assemble your sandwich but leave off the top piece of bread. Cut the top piece of bread in half. (If you want a condiment on the top piece of bread, either apply it after cutting, or cut the bread condiment side up.)

Cooking tip of the day: For hard cooked eggs that peel easily and are done perfectly, steam them instead of boiling. Bring an inch or so of water to a boil in a large pot or the bottom of a steamer, add eggs to a steamer basket or the steamer insert and cover.

Cooking tip of the day: When whipping cream, set aside a few tablespoons of cream. That way, if you accidentally overwhip the cream, you can save it. (Over-whipped cream will be very stiff and look almost chunky.)
