So I get home tonight from work and decided although I am tired as hell, to make a hot dog & a lasagna. Jesus. Anyway, this dog I’m calling the Satay Dog, it’s a peanut sauce as the base & a nice garlicky dog.
Brioche (GF), CL Crema, roasted red chili, sweet & spicy picalilli, lime zest.

Roast leg of lamb from the other night when I was home after work. Slow roast at 275F for 2 hours until it hits 125 internally. Let it rest & it will carry up to 135-138 for perfectly rosy meat throughout. No sous vide required.

Every day I’m becoming more thankful for this site & the discussions it enables. Yesterday on Twitter dot com, there was a young person who was demonstrably wrong about everything they were saying; proven wrong at least 200 times, and instead of saying “my bad”… tripled down. It’s insane.
