This is the way Coq Au Vin should look, down to the vintage serving spoon. In St. Francois, Martinique we'd eat at a small restaurant where this dish was served with breadfruit instead of potatoes. The owner plopped the hot skillet down with plates for each. Then she'd bring me a towel... hot lava!

Ever in the cause of complete accuracy the little town is called Le Francois. St. Francois is on the eastern tip of Guadeloupe a bit east of St. Anne, a delightful little beachside town on the southern shore of Grande-Terre. If we're looking for French immersion Martinique and Guadeloupe can do it.

It definitely is, and the good folks out in the "colonies" always feel compelled to augment the flavor with blast furnace pepper spices.
