Are you ready to try something fun for the month of June? I chose a recipe that is mostly simple but with a lot of options. June can be a very hard time to bake for anyone without air conditioning (like me right now).

Growing up, I adored ice cream sandwiches. The recipe I am sharing was really pretty easy to make. But, is two recipes. So whether you choose to make one or both, share your creations with the hashtags #SpoutibleBakes and #BakeClubJune so we can all share in the fun!

Recipe One is Ice Cream. I love making Ice Cream, but if you don't have an ice cream maker and don't want to find a no-churn recipe, choose your favorite store brand for these. Vanilla Ice Cream is great in an Ice Cream Sandwich, but next time I'm thinking Strawberry!

The second recipe is the cookie layer that will hold that beautiful ice cream you made or chose. I made a traditional Ice Cream Sandwich cookie from the recipe from Smitten Kitchen. My only change was to use Gluten Free Flour.

Look at that batter. Honestly, it was a little difficult to spread, but I got it thinned out as much as possible.

While my cookie layers cooled, I churned the ice cream. I did go with vanilla ice cream, but next time Strawberry or Mint Chocolate Chip may make an appearance!

I used a smaller pan to hold the bottom layer, spread the ice cream over the cookie layer, then topped with the other half of the cookie. If your ice cream is store bought or you made it ahead, make sure to leave it out a little bit to let it melt to the point that you can spread it easily.

Look at those! I trimmed them so they would look pretty (and then immediately ate the trimmed edges). So, so good!
