Terrific article on induction stoves, why top chefs love them, and why they are part of the answer to both climate change and better health.

Love my induction stove. Took a little time to get used to the speed of how quickly it heats — and being able to adjust accordingly. You must use good quality pans tho — where the metal is evenly distributed or you will have hot spots that burn.

We moved into a house that had a cooktop with two induction burners and 3 gas ones. I love the induction, and we are getting a completely induction cooktop soon!

ha I had to get all new pots and pans -- which meant tossing the 60-year old Farberware sauce pan of my mother's that I had kept for god knows what reason.

Yeah— I have a couple cast irons that will work, but will have to replace all my Paul Revere copper bottoms. Thinking of getting Misen? Still considering.
