I made something I don't usually make in the summer: a HUGE batch of my "respiratory" #SOUP , just in case Mum or my in-laws or even Mr Klobby or I get covid from the kids. I didn't use all the butternut squash. Can I freeze it?? Or should I cook it and freeze it? 🤔

Cook at, mash it, and freeze it in muffin tins. Then you can pop butternut pucks out and defrost them in the microwave as a side dish.

When I know it's going to go in the freezer, I only cook until veggies are about 1/2 to 3/4 and then freeze.
