Probably because of the risks of defecting- IIRC Wagner was reportedly known for smashing deserters' heads with sledgehammers.

Not to mention if you still have family in Russia who might be left without support, or even potentially retaliated against by the state.

Though the Ukrainians got this pilot's family safely out of Russia before he defected.
