I tried doing sourdough during lockdown and couldn't get the loaves to rise. I bake other bread well, but I just couldn't get the sourdough down. I should try it again sometime

Were you creating your own starter or did someone give you a mature one to get going with? My friend shared hers with me and she bakes regularly so I knew it was active.

I bought a starter online and kept it going for quite a while. The bread was good, but flat. It wasn't my first go-round with sourdough - Mr Rabbit and I kept a Friendship cake going for a long time once. I should ask friends for starter. That might be better than the one I bought.

My loaves don't get that nice open crumb but they're edible + tasty and that's the main goal. I've been using a kneaded dough recipe from a friend, but I'd like to experiment with the 'stretch & pull' method. It's fun to play around with variables to see how they effect the process/dough.

You just sparked something - I may have kneaded my bread dough instead of stretching and pulling. At any rate that photo you posted shows a beautiful loaf of bread
