I am a little dogmatic about my matzoh ball soup, following the rules laid down by my grandmother Diana. The dumplings should be light and airy, not heavy and dense. And they should be small, not large. Not like in the NY delis where they give you a baseball in a cup of broth.

Oh, back in the day, we saved jars of schmaltz, it's the best. Then cholesterol caught up with us, Dr says we have to be veg.

The matzo ball recipe calls for very little schmaltz in comparison to the number of balls produced. I think it’s 2 tablespoons to a half cup of matzo meal. I keep all the fat trim and skin from chickens I cut up in the freezer and make schmaltz before Pesach and the High Holidays.
