I adore cheese. To the point that I've now developed lactose intolerance☹️. I can still eat the more aged cheeses as long as I don't overdo it. Which is great because I LOVE an aged white cheddar or parmesan.
Having said all that, my favorite cheese is Manchego, an aged Spanish sheep's milk cheese.

I feel your pain. Aged white cheeses like parmesan and Gruyère seem to be OK half the time. But god forbid if I eat an American Chees slice, brie or even cheddar. A world of hurt awaits the lactose monsters within.

Cheddar has less lactose than most other cheeses. Especially the sharp ones. If you're having a reaction to cheddar, it's either not really cheddar, or there;s something else doing on.
