I adore cheese. To the point that I've now developed lactose intolerance☹️. I can still eat the more aged cheeses as long as I don't overdo it. Which is great because I LOVE an aged white cheddar or parmesan.
Having said all that, my favorite cheese is Manchego, an aged Spanish sheep's milk cheese.

I was informed at a Cabot creamery tour that cheddar cheeses, especially the sharp ones, are perfect for lactose intolerants because the lactose is in the whey, and cheddars have as much whey squeezed out of it as they can get out. Iit's not zero, but the amount is tiny. Ditto other hard cheeses.

This is accurate. That's why it's lucky that I prefer aged cheeses!
I do miss fresh mozzarella tho ☹️. There are lactose free versions of fresh cheeses like cream cheese and feta, but I've yet to find fresh mozzarella.

Real feta is sheep's milk but most of the fetas in the grocery store are cow's milk. You just have to read carefully.

Depends on where you are. A lot of "real" feta from Greece is made with goats milk, as is a lot of the feta made or sold in Canada.
