I had a hankering for tempura-don (海老天ぷら丼) so made it myself! Cheated with Costco shrimp tempura, but did the due diligence and made my own Dashi stock to flavor the rice and the soup base. I think it turned out great! Got the hubs seal of approval.

I learned how to make this when I was at school over in Japan. It’s so easy and cheap to make, there’s just a couple of tricks to get the egg to set just right.

Ooh, I'd love to learn those tricks – I've tried to make tempura a few times and it's been ok but not like the real stuff.

Tempura can be tricky. The best trick I can say is to make sure you use ice water, it has to be around 40 degrees. I’ve also used chilled carbonated water too.
