In 1969, Pat Tarrant and Cyril Fleming purchased the rights to open the first Golden Skillet fried chicken restaurant in Canada.
That location was opened in St. John's, Newfoundland and Labrador.

Due to legal issues, they were forced to change the name of the restaurant.

They chose to call it Mary Brown's Virginia Fried Chicken, in honour of Mary Brown Guthrie, the wife of Clifton Guthrie. He was the founder of Golden Skillet.

According to the company, Mary Brown was the creator of the American Southern-fried chicken recipe.

After the rebrand, the company developed its own proprietary cookers to "seal in juiciness and flavour".
Unlike other places, Mary Brown's chicken is not pressure fried.

Mary Brown's slowly started to expand, going into Oshawa and Mississauga by 1972.

Mary Brown's famous taters debuted in Ontario in 1980.

By the late-1970s it had expanded outside Ontario.
The first restaurant in Western Canada opened in Alberta, then restaurants opened in Nova Scotia.

These were followed by restaurants in Manitoba and then Saskatchewan.
