These sound absolutely wonderful! I was surprised to see the confectioners sugar in the dough, but I can imagine the sweet bun with the duck. Thanks for posting.

It was from searching various recipes, I believe it is similar to the use of low protein flour, helps the dough become fluffy when steamed
