And #3 .. "American cheese" is the last signpost before you reach true cheese anarchy*

Do you all just buy or scorn the packaged stuff? Because that’s not cheese, it’s processed cheese food. True American cheese* is sliced at the deli and is delicious, melting perfectly on a burger or a gilled cheese and nothing like that.

*actually true American cheese used to be government cheese.

I bypass it entirely for cheddar, on burgers and sandwiches, etc. American cheese is acceptable when no substitute is available (such as fast food breakfast sandwiches, etc) but given a choice, I'd never pick it

Eh but the fast food sandwiches are still using like, Kraft singles which isn’t the real deal. The good stuff is tangy and smooth, and doesn’t have a wrapper imprinted on it. (And doesn’t get oily when melted either.)

What you want is like Boar’s Head American. It’s 100% cheese, but produced from a blend multiple cheddar varieties specifically to produce better texture and melt. Like cross breeding plants, but with cheese.
