We have a few hundred thousand people on our list, and all of the emails aren't sent at once. It's not like sending someone an email from your email account, they are sent in batches over x minutes.

That's how bulk email works, you are right. I work with bulk email on a regular basis and even if there are no delays at any of the server hops, they still don't all go out at once. There can also be delays at any point in the process that the sender has no control over. Timestamp diffs are normal.
