If America pumps more crude oil than any other country and claims to be oil independent, why does it matter what Saudi Arabia’s oil production is?

Are we independent or not?

Saudi Arabian: 266.2 billion barrels (15.7% of world total)
Canada: 168.9 billion barrels (10% of world total)

The U.S. is not "independent", primarily because fracked crude is "light" and U.S. refineries are generally designed to take heavy crude, primarily from Canada but also Venezuela, SA, and RU (at least). (I'm not sure if they were designed that way for U.S. conventional crude pre-fracking boom.)
