I love Manischewitz Matzo Ball Soup mix. I do doctor it. I first sauté finely minced carrot, celery, and onion with a teaspoon of dried parsley. I add 20% less water and soup mix, then throw in a bay leaf and let it simmer for an hour or so before adding the matzo balls.
