I am restarting the practice of seasoning meat as soon as I get home from the store. Meat is always better when seasoned in advance, and this means I don’t have to remember to do it each evening for the next day.

I open the packages, generously salt them, add pepper to beef and pork, then reward

I open the packages, generously salt them, add pepper to beef and pork, then rewrap them with the original label info. I need to pick up more butcher paper.

The salt will melt and move into the cells, so nothing tastes of salt, it just tastes more completely of itself.
