_Featherweight Pancakes_ Betty Deaver

2 C flour (sifted)
1 tsp. soda
1 TBSP. sugar
1/4 tsp. salt

2 eggs (beaten)
1-3/4 C. sweet milk
1/4 C vinegar

1/4 C. shortening (melted) -- bacon drippings can be used.

Sift flour, soda, sugar, and salt together. Add eggs, vinegar, milk and
shortening; beat until smooth. Bake at once.

My daughter has taken to baking pancakes for her little boys. But she's definitely all about a healthy recipe. So I'm also wondering what would be the best alternative for shortening. I'm a cook, _not_ a baker. 🌝💙

Whatever you consider the healthiest cooking oil should work fine. Unfortunately most of the healthier oils also have a distinctive flavor that would be unwelcome in pancakes.

You back them on a cookie sheet? What size? Oven temperature? Also have you ever use this recipe and added stuff (chocolate chips or blueberries, etc.)? I wonder if/how one could use this recipe and adapt with buttermilk rather than the vinegar and sweet milk. 🌝💙

Bake on a griddle or skillet. I use an ancient electric frying pan at 380ºF four cakes at a time. Adding chocolate chips or blueberries works well, to the batter first or dropped on as soon as pancakes are on the griddle. Don't change vinegar and milk out, vinegar reacts with soda so they rise.
