The SO wanted mint-chocolate chunk cookies. I used Andes mints, and I think next time I'll make chocolate batter instead of vanilla. Still, though . . . yum. 😋 #SpoutibleBakes

🙂 Will do! Here you go:

Heat oven to 350.

Take 1 stick of butter and brown it over medium heat on the stove, stirring so it doesn't burn. Remove & stir in 4 Tbsp vegetable shortening or oil, 1 1/2 cups granulated sugar, and 1 cup light brown sugar. Let cool for 10 minutes. (1)

Add mixture to a mixing bowl. Add 2 large eggs, one at a time, beating to incorporate. Add 1 egg yolk and 1 Tbsp vanilla extract; beat to incorporate.

Sift together 3 1/4 cups flour, 1 tsp baking soda, 1/2 tsp baking powder, and add to the sugar/egg mixture, mixing just to combine. (2)

Take 1 package of Andes mints, chilled & broken in pieces, and stir into the dough. Wrap completely in plastic wrap & chill for 1 hour. Remove 15 minutes before baking; scoop onto baking sheet lined with parchment paper. Bake for 10-12 minutes. Cool for 30 minutes on rack. Serve.
