Those look amazing! Have you tried searing, smoking for a few hours and then sous vide for 18 hours to get to the perfect temp and texture?

I use a Green Mountain Grills Pellet Smoker and love it. Ribs, Brisket, Bacon, Chicken, Salmon all turn out amazing.
