A thread for the #SpoutibleBakes crowd. Step by step directions on how to make Rainbow Cookies. My wife is originally from NY so I learned how to make them for her.

Ingredients:
8 oz of almond paste
1 cup of butter
1 cup of sugar
4 eggs separated
2 cups of flour
6 drops of red and green food coloring
1/4 cup of raspberry and apricot jam
1 cup of semisweet chocolate, I use chips

You’ll also need 3 9x13” pans lined with parchment paper

Combine the butter, sugar, and almond paste together. It helps if the butter is room temperature, I soften it in the microwave because I forget to put it out. I cut up the almond paste to help it mix better.

Add the egg yolks and combine, and then add the flour and combine until throughly mixed. Beat the egg whites until you have soft peaks, and then combine that with dough.

Separate the dough into thirds and the red and green food coloring. Spread the dough evenly over the parchment paper. It’s very sticky, I hold one side down while spreading away from that hand, then turn and hold and spread, over and over until it’s close to even. Do this for all three.

Bake them at 350 for 10-12 minutes, I go the full 12. I usually preheat the over when I start spreading the dough because it takes a while to do that part. Cover a cutting board with cling wrap and after they’ve cooled start assembly. Green, raspberry jam, uncolored, apricot jam, red, cover.

Now comes the fun part, waiting… they need to compress for 8 hours. I usually make them at night, and let them compress overnight. Then the next morning I take them out and let them warm up for about an hour. I do that so the chocolate doesn’t harden immediately when I put it on.

After it’s warmed up, melt the chocolate and spread it over the top and add sprinkles. Return it to the fridge for about an hour. Take it out and let it warm up for about 45 minutes and then you can cut it. If you don’t the chocolate will crack when you cut it.
That’s how I make Rainbow Cookies.

Nice thread work and the instructions are perfectly clear. I’m from California and have never heard of rainbow cookies. Just curious: are they a thing in New York, and is this a new-ish food item (last 10 years) there or have they been around for a long time?

Thank you. My wife grew up with them around, so I would guess they’ve been a thing in NY for a while. I had never heard of them either, also from CA, but I’ve ended up introducing them to a lot of people over the last 14 years.

Started making these a few years ago when my 4 and 6 year old boys saw a recipe in a magazine and asked for them. It was July, so I stalled and said, let's make those for Christmas. December rolled around and they held me to it. Now it's part of the tradition
