Going to share our recipe, but a quick caveat/sidebar: my experience is, every recipe like this w/buttermilk has a lot of wiggle room. If you search “rhubarb buttermilk cake,” you get a full range of flour-to-butter-to-buttermilk ratios, and 1 or 2 eggs. Not sure why that is.

Rhubarb Buttermilk Cake, Western Nebraska edition.

Cake batter:
1½ C rhubarb cut up
1½ C brown sugar
½ C butter
1 egg
½ tsp salt
1 C buttermilk
1 tsp soda
1 tsp vanilla
½ tsp nutmeg
1 tsp cinnamon
2 C flour

Topping: 2 Tbs sugar + 1 tsp cinnamon

1) Mix the dry ingredients (flour, salt, baking soda, nutmeg) in one bowl.

2) In a second bowl, cream the butter and sugar until thoroughly mixed. Add the egg and thoroughly incorporate. Then add the vanilla.

3) About one-third at a time, add and mix in the buttermilk, then flour mix, and repeat until they’re both done. Then very gently fold in the rhubarb.

4) Spread the batter into a prepared 13 X 9. Sprinkle with the cinnamon/sugar mixture.

5) Bake at 355° for 35 minutes, test with a tooth pick, and cool over a wire rack before serving.

The only moderately advanced step here is chopping the rhubarb, so depending on your kids’ knife skills, this is a good one to let the kids take over. This last one was 100% prepped by our ten year old!
