I do an avocado pasta sauce when I get a bunch of them. They can take a mild simmer in a sauce, and it's delicious. I've had them in a fritter, deep fried coated in panko crumbs, and they were sensational.

Sometimes I use greek yoghurt, and if I'm trying to punish myself, double cream. I usually fry off garlic, use a good basil pesto and cream together the avocado and yoghurt/cream. I'll season with fresh herbs, salt, pepper, and a little bit of lemon juice. to finish, I add some of the pasta water ????
