I love the new King Arthur gluten-free bread flour but it makes an utterly unforgiving dough. It can't be kneaded, so you fold it instead. If you don't hit the exact correct consistency in the mixing phase, the dough can't be folded.

So we're making bread today from unfolded dough.

I'm testing two different shaped pans with their Artisan Bread recipe in hopes of getting something sandwich bread shaped.

The pan on the left is my gluten-free bread pan and the one on the right is technically a biscotti pan but I hate it for biscotti. It's great for artisan breads, though.

Bread turned out soft and fluffy. Flavor's good but mild.

Tweaks I'm going to try for the next batch:
1) 1 1/2 recipe to see if I can get a good sandwich bread sized loaf.

2) Substituting in some sorghum to see if I can get a richer flavor.

Ave you heard of Chef Alina? I took her sandwich bread class and it's a pretty amazing loaf of gf bread. I also love her pop tart recipe. And her pierogi recipe. And get blueberry muffin recipe. (You get the idea. 😁)

She often has sales on her classes so watch out for those. That bread class was worth every penny. She has tons of free recipes on her website. And she has a fb group and her and Chef Patrick are extremely responsive to questions.
