BEFORE: Playing with sourdough today. Added einkorn wheat, which I never used, but increased the water by 5% to increase hydration to 75%.

AFTER: Just baked that loaf, and boy, is it beautiful. That EAR! (last pic) Can't wait for it to cool so I can try it :) Baking bread is such a joy. #sourdough

I'll letcha know! It's best when it's entirely cooled, fresh out of the oven is gummy; it needs to cool, rest, and set, easier to slice, too. Not my first rodeo, and all that. Ok, maybe tonight 😊

It's delicious! I just had a slice (cut perpendicular to the ear, they're huge) and made a sandwich. It's soft, flavorful with a crunchy crust but not a lot of sourdough tang. I'd leave it another 24 hours to proof in the fridge next time. Any flavor diff with 30% einkorn flour was negligible.
