Back from a four-day camping trip in the Mt. Hood National Forest. Here's a photo of Lost Lake with Mt. Hood in the background. I'll add some food pics in a thread, because ours is not typical for American camping.

That is gorgeous! Perfect weather for SUPPing as well. Did you SUP? And how long does it take to climb Mt. Hood? Hikeable or a no go?

omg, the SUPpers were thick! I didn't realize it was so popular, so now I want to try. Lost Lake is perfect for SUPping because motorized boats are not allowed.

Mt. Hood is not that easy. It would take most of a day, and spring climbing in the snow is safest. Too dangerous this time of year.

Yakisoba and oden are both easy to make in one pan or pot. We've also recently discovered Tiberino pasta and risotto that can be made in a pot/pan without having to drain water, and the quality is impressive.
