We put almost 100 oz of bell pepper/onion/shallot/leek/celery mix into the freezer yesterday. Rural SW IA price savings: $45 (leeks priced out of Omaha, can’t get them at our store.) That’s using only half the peppers we picked yesterday. This afternoon’s experiment: homemade bacon.

I love the idea of freezing for later use. I am considering picking more apricots and freezing them in halves, good for baking. Only the plastic bothers me. It gets into the food. Some glass jars broke, some did not. I am not an expert, sigh.

In our experience, 2 things causes jars to break in the freezer (assuming you’re using canning jars); being too full and getting bumped. I store ours in the door of our upright to minimize that, and only fill them to the shoulder. Commercial jars aren’t thick enough; we use them for dried stuff.
