Great article! My Memere made a very simple tourtiere with ground pork butt, ground sirloin, onions, nutmeg, cloves, and muscat raisins to soak up the fat. Never potatoes! Her family hailed from Quebec province. I make her tourtiere every Christmas, with Flaky pie crust just like she did.
