Made this “Philly Fluff cake” yesterday with high altitude adjustments (I’m at 5280 feet). It’s truly the best pound cake I have ever made. I’ll post the recipe and the high altitude guide- which is also the best guide I have found.

“Philly” is named for the cream cheese… the recipe was created in the tradition of cakes from the Italian and Jewish bakeries in NYC area. https://www.epicurious.com/recipes/food/views/philly-fluff-cake?utm_source=onsite-share&utm_medium=e...

The crumb, flavor and texture came out perfect. I wouldn’t call it “fluffy” but rather the perfect balance you want in a pound cake. These are the best high altitude suggestions I have ever seen or used https://www.foodleclub.com/baking-high-altitudes/
