Before I started smoking duck, I would just buy the D’Artagnan smoked duck breasts and dice
Duck Char-Sui Filling V Filling Ingredients: • 3 smoked duck breasts diced (cooked diced pork or chicken works) • 300ml water • 3 tbsp. cornstarch • 3 tbsp. soy sauce (I've been using Lee Kum Kee Double Fermented) • 3 tbsp. oyster sauce (LKK Premium, MegaChef or Maekrua Brand) • 3 tbsp. hoisin sauce (LKK, or Look for brands that lists sweet potato near the top of the list) • • • 3 tbsp. sugar 2 tbsp black vinegar variations: try adding, White pepper, five spice powder Sauce Directions: 1. Mix cornstarch and water add to skillet on low heat 2. Mix in Hoisin, Soy sauce, Oyster sauce, sugar 3. Raise heat to medium, stir constantly 4. Keep mixing until large bubbles form and sauce thickens 5. Add diced cooked meat and mix 6. Set aside then chill

Sift together flour and powdered sugar. Place sifted flour mixture in a large mixing bowl and make a well in the middle. 2. Fill well with lukewarm water, vinegar and yeast. Use a spatula, gently stir the water to dissolve the yeast then slowly bring together flour mixture. Kneed til mixed 3. Add in vegetable oil, pinches of salt, and knead for 10-15 minutes until soft dough is formed. It should be smooth on the surface, a bit shiny. 4.
