Cooking tip of the day: For hard cooked eggs that peel easily and are done perfectly, steam them instead of boiling. Bring an inch or so of water to a boil in a large pot or the bottom of a steamer, add eggs to a steamer basket or the steamer insert and cover.

Steam for 13 minutes (14 if you want to be sure the yolks are completely dry, as for deviled eggs), then remove to an ice bath. For egg yolks that are soft and moist in the center -- called mollet eggs in French cooking -- steam for 9 to 10 minutes. #spoutiblecooks #spoutiblefoodies #cookingtips
