The key to a soft, chewy cookie is to use both brown sugar and baking soda. The acid in the brown sugar reacts with the bicarb to produce CO2, which puffs up the dough. Baking is all about chemistry! It also helps to chill the uncooked cookie dough for an hour before baking, to prevent spreading. 😉

Generally, you're going to cream together the butter with the brown sugar, so don't use melted butter! I find it easier to use butter that's softened a bit...
