It’s a contraction of “you all". The apostrophe replaces the missing letters o and u, so it’s "y’all".

Funny anecdote this brings back - Florence, KY built a mall in the '70s. They had a big water tower visible from I-75. They painted "Florence Mall" on it. Which was a no-no. So they repainted it to say "Florence Y'all."

It’s not strictly a Texan word, but it is/was strictly spelled “y’all” in Texas! Molly would chew this deviant spelling up. Then again, I ain’t lived there since 1971, so….
