Cooking tip of the day: If you cook with chipotle chiles in adobo sauce, try this. Instead of chopping or mincing one or two at a time, puree the whole can, with sauce, then refrigerate in a sealable container (plastic will stain, so use glass if you have it).

Most recipes call for a chipotle (or two) plus some of the sauce, and it's much easier and less messy to scoop out what you need than to have to stop and chop every time you need one. Figure one rounded teaspoon for every chile called for, more or less to taste.

You can puree them in a mini chopper, or small blender jar, or with an immersion blender. The vinegar in the sauce acts as a preservative, so they'll stay good in the fridge indefinitely. #SpoutibleCooks #SpoutibleFoodies #CookingTips
