I seek the wisdom of the #SpoutibleCooks community with a question on Indian cooking.
When my wife and I eat Indian food, we love the way the rice comes out. It doesn't stick to each other at all. We can't replicate it. We've tried basmati and jasmine with no luck. How do you get it like that?

Thanks! One follow-up question: Is the basmati I get in a typical supermarket okay, or do I need to go to an Asian specialty store?

You’re getting amazing advice from @LadyDi ! If I may add—most Indians are partial to a brand.I love Dawaat-aged for 2 years. I’ve found it in a reg store but most often I get it at the Indian store. My mother always soaked the rice overnight. Not necessary but cuts the cooking time, prevents clumps.
