I (probably) wouldn't buy it, but that's because I have limited time and funds and cookbooks in general aren't my thing. But I do work in a bookstore, we sell a LOT of cookbooks, and based on that, I expect there'd probably be a market for it. The history element adds interest (for me at least).

Thank you soooo much for this input! That’s so encouraging! As a writer specializing in French cuisine, I follow pretty closely what’s published for the American market and I know no one has done this but I’m thrilled you think there’d be interest!
