When my Mom and I were in New Brunswick, we went to an Acadian restaurant (hardy cuisine). Mom exclaimed, “My mother used to cook like this! I had no idea it was a cuisine!” I responded, “you cook like this too!”

Dad’s Mom, also Acadian, couldn’t boil water! 🤣

Mom was a fair cook but my grandmother’s food was heavenly. She taught me to cook. My mother made carb heavy stuff. It’s no wonder 4 out of 5 of us became diabetic. I can do the home cooking southern dishes but these days I either make it sparingly or modified to be healthier.

Since Acadians are the forebears of Louisiana Cajuns, does that mean Acadian cuisine is the starting point for New Orleans cuisine?

From what I have seen, there is little resemblance. I think Cajun cuisine has too many other influences, and I think Cajun today means many different things than it did originally.
