I think some really great "book rewrites" have come out. E.g., I think everyone who ever read or saw Gone with the Wind owes it to themselves to read The Wind Done Gone, which recontextualizes it brilliantly from the POV of the enslaved characters. Its copyright case changed parody/fair use laws.

One such book I read and still love is Caliban's Hour, which retells the story of The Tempest by Shakespeare from the POV of the abused and exploited title character. It's a heartbreaking read, really.
