I suspect it's that people aren't willing to reward Starbucks because of its hardcore anti-union stance. If they knew the workers were getting a fair shake, they'd be more inclined to shop there.

Caribou & Dunkin, a local shop (actually the worst coffee) and McD coffee is so much cheaper and, at least here, tastes better. They are my last choice because union thing + taste.
I think they pulled a subway in the 80s; they just have way too many stores. People are looking for something new.

I've started spending my coffee duckets at a weird little shop down the street that's 1/5 florist, 1/5 comic book store, 1/5 coffee shop, 1/5 antique shop, and 1/5 something I can't quite make out. They have a doggo I can hang out with while I wait for the coffee to brew. Much better than starbucks.

At least in my area, there are several local shops (Heine Brothers, for one) that offer better quality for the same price.
Starbucks isn’t an innovator any more.

Or maybe it's more that a pandemic caused people to wise up to the fact that they can better make ends meet if they don't spend like they're made of money, & a prime example of such is buying $5 beverages 5× per week, which averages $1200 per year! Maybe they're realizing value in money discipline.

Along with fewer people going into the office, so it no longer results in a trip outside to the coffee shop 'water cooler'.
