In honor of Anzac Day, thank you to the people of Australia & New Zealand for your nations’ sacrifice. Respect.

The cookies of the same name, so called because they were often sent to WWI soldiers (ANZACs) due to sturdiness and shelf-life, have long been my favorite.

Anzac Cookies:

1 cup each AP flour, rolled oats, chopped walnuts, sugar & unsweetened coconut
1/4 tsp salt
1 tsp baking soda
4 oz unsalted butter
3 tbsp Lyle’s Golden Syrup

Combine dry ingredients. Slowly add 2 tbsp boiling water to baking soda and mix.

Melt butter and add along with the soda/water to the dry ingredients.

Mix batter by hand.

Scoop onto ungreased baking sheet and press each cookie into a flat disc with palm.

Bake at 350°F (175°C) for 12-14 minutes. Allow to cool on the sheet.
