Foodies of Spoutible: Upon request, I'm going to do a thread with my tzatziki recipe. This is my own personal recipe that I got from my mom (born/raised in Greece) that I massaged to my personal preferences.

Let's start with the ingredients:
> 32 oz. Greek yogurt
> 2 long (hot house) cucumbers
> ½ tsp salt
> 10 garlic cloves chopped / mashed into a paste
> 2 tbsp chopped fresh dill
> 1 tbsp olive oil
> 1 tbsp lemon juice or white vinegar

Start with the cucumbers as it requires the most amount of time. Let me explain.

Peel the cucumbers, cut in half the long way, and remove the seeds. I use a spoon to remove the seeds.

I recommend removing seeds over a bowl and not the garbage. I've accidentally let it slip once or twice. Oops.

This next part is where I differ from recipes you might find online.

Cut the cucumber into pieces about the size of a pea. This tends to take me a while as I'm no specialist with a knife.

Put the pea size cucumbers in a strainer over a bowl, add a pinch of salt, mix, and let is sit for 3-4 hours.

I like the tzatziki thick for easy dipping. Straining the cucumbers is important to ensure the tzatziki isn't runny. You'll notice a good amount of water is left after 3-4 hours.

Also, cutting the cucumber into pieces the size of a pea makes the tzatziki more meaty/crunchy. In essence, it adds texture.

Let's move onto the dill.

I buy pre-packaged dill (about .75 oz) and chop it up. Maybe one day I’ll grow my own dill, but I’m not there yet.

You can get away with 1 tablespoon, but I use 2 tablespoons. I go overboard as it’s not just good for flavor, but also adds a little color to the tzatziki.

Now, my favorite part... garlic.

You'll get the best flavor using a head of garlic. Pre-packaged, peeled garlic works too.

Garlic salt/powder or anything of the sort is not acceptable!

I use a garlic press to extract the garlic from about 10 cloves.

Be warned, the garlic will smell up the house for a few days.

Also, I've built up this recipe to 10 cloves. This might be a bit much for the faint of heart, so maybe start with 4-5 cloves the first time.

Personally, I love the extra kick the extra garlic give this recipe.

Let's talk yogurt before we mix it all together.

I buy and use full-fat Greek yogurt, but have had pretty much the same results using reduced fat yogurt.

It's time to mix it all together.

Transfer the greek yogurt into a mixing bowl.

Add the cucumbers (after letting it sit for 3-4 hours), dill, and garlic to the yogurt.

Add 1 tablespoon olive oil, 1 tablespoon lemon juice (or white vinegar), and a pinch of salt.

Mix with a spoon.

Now comes the worst part.

Cover the bowl and put it in the fridge overnight to let the garlic marinate. Is marinate the right term? Who cares, you know what I mean.

It's ok to have a taste, but you'll really get the full affect the next day.

Follow-up Note #1 :

If you read an online recipe that says tzatziki takes 15 minutes to make... they're taking short cuts and they're wrong.

Patience is key to making good tzatziki the right way.

That statement applies to almost anything.

Follow-up Note #2 :

This is a great recipe for any sort of holiday / family / friend gathering.

You can make it a day or two beforehand and everyone loves it... assuming people haven't been lying to me all these years.

Follow-up Note #3 :

Tzatziki is great for dipping, but don't limit it to just that.

I had a toasted turkey sandwich for lunch today. I added tzatziki to the sandwich (after toasting) and it was spectacular.

I've even added it as a topping on burgers.
