I still don't get why low-sodium foods cost more.

There's *less* salt.

What are they charging us for? Air?

I just hate that all healthy food options cost more.

My wife is vegan and my daughter vegetarian, so our house is familiar with the phenomenon of fewer ingredients = higher price. The reason is that there are costs for labor, packaging, advertising and more that are spread across more individual units for the "default" version. The "special" version

has all the same costs, but they're spread over fewer units. In other words, each customer shoulders a larger proportion of the fixed costs of producing the product.
