We had a cool weekend, so it was time to pull that ham bone out of the freezer, to make stock. I do it in a roaster, in the oven. Cover half the bone with water and spices, at 350F. Every so often, flip the bone over, add more water. The top gets browned, then that goes into the stock. Repeat.

Once all the leftover meat has fallen off the bone, strain the stock and pull out any usable meat.
When you use the stock, it's pretty concentrated, so adjust accordingly.

Normally by now i will have made lentil soup with the Easter ham bone , but due to things we had a very small very small Easter this year so no bone this year
