Planning a BBQ for work, and we have a number of vegetarians. Looking for recommendations for awesome make ahead veggie main dishes. Any ideas for tried and true recipes is appreciated!

LINDA'S 5-MINUTE VEGETARIAN CHILI
Can of chili beans, can of black beans, cut up precooked veggie sausage, diced water chestnuts, can of corn. Stir together & nuke, add cumin, chili & yellow curry powders to taste. I've literally made this for a potluck I discovered I had to go to in 10 minutes.

Not sure people would think it's a main dish, but I think it is because I can't get enough of it lately: any kind of Elote/Mexican Street Corn.

Also grill fruit, it's amazing: pineapple, peaches, other stone fruit, etc.

I had to google this, and I will absolutely be testing this out! I haven’t seen Cotija cheese around in the grocery store. Is it worth tracking down, or does feta do a decent job as a replacement? Love feta…

I'm a big fan of portobello burgers but you can't really "make them ahead". What about veggie fritters? Or a big fav around here: stacked veggie quesadillas?

The veggie main is to accompany steak for the non-vegetarians. I’ll look into the stacked veggie quesadillas. Thanks!
